Quick Scalable Tacos

We've been making this dish every couple of weeks for the last couple of months.  It is fast, easy and scales to feed a lot of people.  Yesterday, I did all the cooking and preparation in the 20 minutes between when I got home and picked up Davis from daycare.  The only downside to the recipe is that it generates a lot of dishes, but I'm usually happy to trade off cooking time for cleaning time since that allows more time with Davis.  You can easily make more left overs by simply doubling the turkey.  I suspect this would be great with Soy Protein as well.

Vitals:
  • Cost: About $11
  • Serves: 2 for dinner and 1 for lunch the next day.
  • Prep Time: 20 minutes
  • Total Time: 20 minutes

Materials:
  • 1/2 pound ground turkey ($2.50)
  • 1 large onion: $0.50
  • 1 can black beans: $1.10
  • Lettuce: $1.00
  • 4 oz cheddar cheese: $1.50
  • 1 package taco seasoning: $1.25
  • 6 Taco Shells: $2.70 (package)
  • Salsa
  • Sour cream
  • Other toppings

Methods:

  1. Start the turkey in a frying pan
  2. Chop the onion
  3. Spray a second frying pan with olive oil and saute the onion 
  4. While the turkey and onion cook:
    1. Open the black beans and pour off a little bit of the liquid
    2. Slice the lettuce
    3. Grate the cheddar cheese
    4. Prepare the taco seasoning
    5. Turn the oven on to heat the taco shells
  5. When the onion turns golden, pour the beans over the onion and stir
  6. When the turkey finishes, add half the taco seasoning to the turkey and half to the onion/bean mix
  7. Cook the beans and rice until the liquid is mostly gone
  8. Put the tacos shells in the oven to warm up
  9. Puree the beans and onion mix in a food processor
  10. Serve and make your own tacos, burritos or taco salad
