Most of the cooking time here is in the rice. I started the rice when I got home from work and after picking up our son from daycare, I did the rest of the prep and cooking. Since there is very little invoked once the chicken hits the pan, I was able to clean up the kitchen and take care of other chores while dinner simmered.
Vitals:

- Total Time: 40 minutes
Materials:
- 1/2 cup white rice $0.50
- About 1 tbsp Canola oil
- 1 pound organic boneless skinless chicken breast, $7
- Trader Joe's 11oz That Red Curry Sauce, $2.70
- 1/2 small bunch cilantro, $0.85
- Cook the rice, 40 minutes
- With about 15 minutes left on the rice, slice the chicken into strips and heat the oil on medium in a large frying pan
- Add the chicken to the oil and cook on one side
- Turn the chicken and pour the sauce over the chicken
- Cook until done
- Serve over rice with chopped cilantro

Sweet potatoes works well. I used scallions instead of cilantro the last time and that worked well, though the cilantro was better. Cashews next time maybe.
