Quick Thai Red Curry

This dish was inspired by the label on a Trader Jo's Thai Red Curry Sauce.  For about $11, your get a quick, protein rich Thai meal for two.   Next time, I would I consider throwing in cubed sweet potatoes for an easy veggie.

Most of the cooking time here is in the rice.  I started the rice when I got home from work and after picking up our son from daycare, I did the rest of the prep and cooking.  Since there is very little invoked once the chicken hits the pan, I was able to clean up the kitchen and take care of other chores while dinner simmered.

Vitals:
  • Cost: About $11
  • Serves: 2, no left overs
  • Prep Time: 5 minutes
  • Total Time: 40 minutes

Materials:
  • 1/2 cup white rice $0.50
  • About 1 tbsp Canola oil
  • 1 pound organic boneless skinless chicken breast, $7
  • Trader Joe's 11oz That Red Curry Sauce, $2.70
  • 1/2 small bunch cilantro, $0.85
Methods:
  • Cook the rice, 40 minutes
  • With about 15 minutes left on the rice, slice the chicken into strips and heat the oil on medium in a large frying pan
  • Add the chicken to the oil and cook on one side
  • Turn the chicken and pour the sauce over the chicken
  • Cook until done
  • Serve over rice with chopped cilantro

  1. Sweet potatoes works well. I used scallions instead of cilantro the last time and that worked well, though the cilantro was better. Cashews next time maybe.
